Thai green curry

Ingredients

  • 2 tbsp olive oil
  • 200g cauliflower (1/4 of a cauliflower), sliced in florets
  • 1 red or orange pepper, sliced
  • 120g shiitake mushrooms, thickly sliced
  • Thai green curry paste (1/2 a pack)
  • 400ml (1 can) coconut milk
  • 100g fine green beans, topped and tailed
  • fresh coriander
  • Jasmine rice to serve

Procedure

Heat the oil in the wok until smoking. Add the cauliflower and fry on medium heat for 5 minutes until browned and beginning to soften. Increase the heat and add the peppers. Fry for another 5 minutes. Then add the mushrooms and fry until soft.

Put the Jasmine rice on to boil for 15 minutes.

Add the curry paste to the wok with the coconut milk and beans. Simmer on a medium heat for 15 minutes. Add the fresh coriander and serve with the rice.s
